Since we're sure there will be plenty of chances to eat standard burgers & pizza fare on this trip, we thought we'd try to expand our kids' palates here and there. Both Lincoln, Nebraska (last night's stay) and Laramie, Wyoming (where we are now) are college towns, which means there were a good number of food choices. Last night, we tried Vietnamese sandwiches at Banhwich Cafe in Lincoln. Tonight we tried Corona Village. It was very good, and surprisingly guest/kid/visitor friendly. It had the feel of a decent chain restaurant, but this was evidently its only location.

Banhwich Cafe was alright. Unfortunately, the bread had egg in it so Josiah couldn't have it. But since we were in a tiny strip mall of Vietnamese shops, we just walked down a couple stores to pick up some pho for him. Both the bahn mi sandwiches and the pho were okay, but nothing comparable to Chicago (no surprise). But flavor was decent overall considering we were in Lincoln, NE, next to Cornhusker Center near Cornhusker Highway...!
Josiah said that Corona Village was pretty good. !!! That is really high praise coming from him! We're glad that the kids have all had good attitudes about trying different things, even if they may not always be very excited about it. (Kind of like seeing the Ames Monument, ha).
